boozy tofu mousse

I made this chocolate mousse recipe that Lyle linked to. It was really good. I didn’t make a vegan version of the recipe – I used milk and regular chocolate chips. If I hadn’t been making it late at night, I would have used the blender, which I think would have given me a better texture for the mousse. There are still itty bitty tofu bits in my mousse. The combination of booze and chocolate masks the tofu taste, and the dessert tastes like it is much richer than it actually is. I think since you are eating soy protein, this would actually qualify as a semi-healthy dessert?
